Homemade Pizza Rolls

Yesterday was the most chill day the Bacon family has had in quite some time. The Lord commands a Sabbath and I admit to often times viewing it as a recommendation. When Ian got home around from work until this (Sunday) morning, we didn't do a singled scheduled thing! We lounged, watched a few episodes of Bones, napped, and played with Aubrie, which was fun and entertaining. I like when we can notice and laugh at her quirks together. For dinner we made mini, easy pizza rolls. This meal is quick and doesn't take much prep and Ian helps me - that's how easy it is. We altered the recipe from here and put our own spin on it, we were very impressed!

She's all ready to help!

All rolled up, ready to bake

Yummy garlic butter glaze

Ingredients:
2 (8 oz.) packages of refrigerated crescent roll dough
(If you're feeling brave, make your own dough!)
1 (6 oz.) package of pepperoni's
(I didn't use the whole package though)
8 String cheese sticks, halved
Marinara sauce

Garlic Butter Glaze:
2 tbs. butter, melted
2 tbs. extra virgin olive oil
1/2 tsp. italian seasonings
1/4 tsp. garlic powder
1 tbs. grated parmesan cheese
crushed red pepper (as much as you fancy)

Assembly:
Pre-heat the oven to 350 degrees

On each dough triangle lightly spread the marinara sauce
Place about 5-6 chopped pepperoni's at bottom of the triangle
Top with the halved string cheese
Roll
Place seam side down on cookie sheet
Bake for 12-14 minutes
-
While the rolls are baking...
Combine garlic butter glaze ingredients
Stir then brush over baked rolls

I'm ready to dip!

Yum!
I dipped mine in ranch and marinara... I'm a loyal dipper. This time around we let the cheese cool to room temperature before assembling the rolls in hopes of achieving extra gooey-ness after baking. We didn't notice much of a difference in doing that but that's okay. Its still an awesome simple, weekend dinner. Altering this recipe is painless for each family, take out the pepperoni's if you're a vegetarian, use raw milk organic cheese if you don't care for the tampered kind, etc. You should give this recipe a try, let me know when you do and what you think :)

What'd you have for dinner last night?
