Apple and Wedded Bliss

I've been meaning to make apple butter for some time. Last time I made Ian a dutch apple pie I said I'd use the leftover apples to make apple butter - but never did. Friday was chilly, I had apples and we had a wedding to attend so I decided it would be a perfect day to leave the slow cooker on and come home to yummy apple spread. 


It was so easy I almost felt guilty something that tasty came with such little effort. I used 9 apples because that's what we had... which seems like a decent amount but only made 1 jar of spread. I washed, peeled then cut each apple into inch sized cubes. 


I then added my ground cinnamon, would of used a stick if the closest place to buy single sticks of cinnamon wasn't 45 minutes away. I also stirred in nutmeg, all spice, light brown and granulated sugar along with some water.


My dear friend Miranda came by and painted her nails for the wedding while I assembled the apples. It was nice to have company aside from my baby love. She left and shortly after when Ian came home the house already smelt delicious. By the time we left for the wedding the slow cooker full of apples looked like this...


I was advised to use slow cooker bags and this was the first time I attempted to do so. They're AWESOME. I had literally 60 seconds worth of clean-up and if you often cook with a slow cooker you know that's unheard of. At least that's the way it's been for me, maybe I have a cheap one but I always get food glued to the edges and sometimes a partially burnt dish :( With this bag, psh... no such thing! 

Chelsea's wedding is next month - so excited for my friend!

We got a text from my dad that Aubrie was inconsolable. She usually goes to sleep between 8:30 - 9:30 and is use to being nursed before bed, so although we had to leave around 9:30, we were still out for about 4 and a half hours. That's a pretty big deal for me and the longest I've been away from Aubrie. It was odd that she wasn't there but nice to be away for so long. After she was in bed, Ian and I got back to the apples...


When we got home the apples were cooked completely. I decided to put them in the blender for added smoothness and added some more sugar. It smelt sooo good we had to try it. We toasted some bread and had a piece each. It was delicious! I'm glad we have a jar and am guessing it'll go quickly!

Here's the breakdown of ingredients:
9+ apples (various types)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. all spice
1/2 cup brown sugar
1/2 cup sugar (or to taste)
1/4 cup water

Assembly:
Peel, core, cube apples
Add other ingredients
Put in slow cooker
On high for 5 hours
On low for 5 hours

  2. Hand picked apples would be make it all the more delicious! I'm not good at seasonal cooking yet, this is very fall-ish treat.
